Hand Cream for Chefs: Cracked Hands From the Kitchen
Chefs and kitchens · Skin is gear

Twelve hours of water, heat and citrus. Knuckles split by Friday.

A line cook washes hands dozens of times a shift, then plunges them into hot water, acid, salt and onion. Add twelve hours on a kitchen floor. This is the hand and feet routine that fits a shift: fast, clean, and done before service.

Skin is gear
Why kitchen hands crack

Water, heat and acid, all shift.

Every hand wash takes some of the skin's oil, and a kitchen asks for dozens a shift. Hot water and dish soap take more. Citrus, vinegar, onion and salt find every crack and make it sting. Knuckles split first because they bend the most, and the knife hand builds a callus that catches. Below the hands, the feet and lower back take twelve hours on tile.

The routine has to fit the kitchen. Repair absorbs in about a minute, so it goes on before service and after close, and you wash before you touch food the same as always. Split+ goes on overnight, when nothing is in your hands for eight hours. Performance keeps the feet drier in clogs. Rhino was formulated by a chef. Kitchen hands are not a theory to us.
